Minestrone Soup
Minestrone soup is a versatile dish because you can add any kind of vegetables or meat such as shredded chicken breast etc... Love this especially during stay-home rainy days. :>
Servings: 3-4
Ingredients:
2-3 tbsp tomato paste
1 can (220ml) diced tomatoes
1 big potato
1 long carrot
1 big onion
3 cloves garlic
2-3 tbsp of Olive oil
3/4 pot of chicken stock
2.5 handfuls of pasta
Salt and pepper
1. Prepare chicken stock. Can easily get chicken stock cubes from the supermarket and follow the directions accoreding to packaging.
2. Mince the garlic and chop the vegetables into cubes.
3. Add Olive oil into saucepan. Add chopped onion, carrot and celery. Cook for about 3-5 mins.
4. Add minced garlic and chopped potatoes. Add salt and pepper to taste. Cook for about 3-5 mins.
5. Until when potatoes are almost cooked, add the diced tomatoes and tomato puree. Add chicken stock. Let it simmer under low heat for approximately 20 mins.
6. Add pasta. Done when pasta is cooked.
Best serve when hot.
